Quick question - we ran out of gingersnaps sp naturally I had to make more! I am using your recipe but mine aren't coming out as flat and large - they still taste great though & actually look more similar to the photo you posted along with the recipe back in '08. How did you get them so flat and even this year? Thanks!
With this oven (which is OLD and less reliable & not convection) I ended up doing just one pan at a time, turning the pan at halfway front to back. Otherwise only my bottom pan was cooking the way I want and the top weren't getting as thin (because the bottom pan was preventing the direct heat). So try that. Also maybe put your pan one shelf closer to the bottom heating element. My 2008 cookies were with a convection oven so they also didn't get as thin... since the heat was uniform. If you like the thinner ones (I do, too) just do one pan at a time & it should help... then try one shelf lower if you need to. Make sense?
