Dinner Is Served

After watching an old episode of Jon & Kate plus Eight wherein Kate was serving up some hummus with a tomato & onion salad I was inspired to make some myself. After searching in vain for her recipe I hodge podged a few I found online together. The result was light and flavorful and exactly what I was looking for. It was perfect as a side salad but I think it would be fantastic served on top of a broiled or grilled light fish. The salad marinates a bit in the dressing but despite the olive oil... which mostly remains in the serving bowl... the salad stays very low calorie.

Tomato & Onion Salad

1 pound vine ripend tomatoes, sliced into wedges
1 small Vidalia (or Red) Onion, thinly sliced (about 1/2 pound)
2 handfuls Parsley, stems removed and coarsely chopped
juice of 2 lemons (4-6 T)
4 T olive oil
3/4 t ground cumin
salt & pepper to taste (I used a fair amount of salt)

Combine tomato, onion & parsley in salad bowl. Pour lemon juice and olive oil over salad. Season with cumin and salt and pepper. Toss to coat and let sit to meld flavors before serving.

4 - 1.5 c servings at approx 75 calories each (with dressing left in bowl)


**This recipe is easily changed to a Mexican inspired tomato salad by changing out the parsley for cilantro.

I saw that episode a while back and actually emailed her to see if she could share it I have yet to hear back not counting on it really seeing as she does have 4x as many kids. Im so happy you posted this Im looking for meals that dont require the stove or oven seeing as its 99 degrees here and only getting hotter as summer is upon us.

I make a very similar tomato salad, only I use basil instead of parsley. Soooo good, and refreshing on hot days. It has been over 100 degrees here the past 4 days...ugh!

That looks so tastey...wish I had some tomatoes in the house. Ah well, next week. Happpy to see things have calmed down and you're looking and sounding like your chipper self. :)

sadly this video was shot before the shit storm...
I'll probably write more about it later. Almost worse than what went down is that it will never be openly discussed. Awkward.

tomatoes, onion & basil - with a vinagrette dressing. I grow my own tomatoes and basil, so they have so much more flavor than what you get in the store...but I just love tomato and basil together.

That sounds delicious, and Hubby loves anything he can eat with hummus, so I'll give this a shot when he's back in town.

Saw your note to Haley. It's the inability to talk about anything that makes it sooo uncomfortable, isn't it? I was reminded of that so many times as I watched your shit storm unfold, and I promised myself I was going to speak up if last weekend sucked. It did, and I did. I'm blogging fearlessly (well, almost) thanks to you, my dear.

My MIL makes this and serves it over grilled chicken and it is fantastic. We eat it by itself too but it really does go well with chicken. I never thought about trying it with fish but that sounds good so I'm going to give it a try.

Now I will tell you I haven't had it over fish yet but could really imagine it over a pan seared Tilapia filet. Yum.
But you probably have a lot more fish options down there...

I have made something like this for Ken...Mr.F and I share a distaste for tomatoes....I grew tomatoes and kept trying to eat them, but it feels like I'm eating acid when I bite into a tomato. I have weird food things...

What really was keeping me watching the video was hoping you would show us what Baby was into....it sounded dramatic!!!

Just to my left is a wooden play kitchen. It has cupboard doors (oven) and a stove top and a hole for the sink. She was able to jam herself in there with her head popping out the sink hole. I thought she would get stuck... or knock the whole thing down on top of herself. She really is a mischievous one... always getting into something.

After she did that oven thing, it sounded like she dumped over three bins of toys....I was riveted waiting for the reveal.
I was the kid that was always forcing my mom to go to the hospital/emergency room/doctor, lots of stitches and broken bones...fun good times!!!

That looks fantastic, I am definately going to try it! The cumin sounds really good. By the way, if I didn't like you I would have to hate you you skinny athletic badass you ;) By the way send some positive thoughts this way, we are listing the house next week, I did all the awful,crappy jobs this week like the attic and basement cleaning, all we have left is to touch up the trim outside and paint the front door, a little landscaping and that's it!
