The Stress Made Me Do It
Peanut Butter Smoothies
taken from "The King Arthur Flour Cookie Companion"
6 T butter (I used unsalted)
1/2 c peanut butter
1 c granulated sugar
1/4 c brown sugar (I used dark)
2 large eggs
1 t vanilla
1 c unbleached all-purpose flour
1/4 t salt
1 t baking powder
1 c chocolate or peanut butter chips, or lightly salted peanuts
Preheat over to 350. Lightly grease a 9x9 pan (I lined with parchment).
In a medium-sized bowl, cream the butter and peanut butter together until smooth.
Add the sugars, beating to combine. Beat in the eggs one a t a time, scraping the inside of the bowl after the first egg. Stir in the vanilla.
In a separate bowl, whisk the flour, salt, and baking powder together. Add to the peanut butter mixture, stirring to combine. Mix in the chips.
Spread the batter in the prepared pan (use wet finger tips to press in the pan). Bake the bars for 30 minutes, until the edges just barely come away from the sides of the pan. Remove from oven and cool completely before cutting.
Makes 16 bars at 237 calories a piece (made with chocolate chips).
*These were fantastic with the choc chips... if I had had all three mix-ins I would have used them all... that would have been out of this world!

Are those chocolate chip cookie bars???? I LOVE choc. chip cookies, but something about them in a bar/brownie shape....yuuuummmm!!!
I'll take bets that its gone in one day...at least, thats how it would be in my house! ;-)
And it is totally not fair to suffer in silence...share the recipe so that we may all join in the misery! :-)
damn that looks yummy!
I'll post the recipe in a bit.
They are peanut butter choc chip bars... and they are fantastic!!!
This looks so yummy, and I bet they taste fantstic nice and warm too. This pregnancy is killing me I only crave sweets, so yes yes please post I need ok I want to try this plus peanut butter has protein in it right!
Andrea,
I put it up for you!
damn you, Mrs. F...damn you. ;)
Oh, that is just WRONG. I was planning to make banana bread tonight and delude myself into thinking it's somewhat healthy because there's fruit in it. Now I may have to change up the dessert plan...
Bars look fantastic - yum! Two thoughts (not trying to be bossy or intrusive), 1) how about hiring a sitter for a few days a week? 8th graders going into 9th need the cash and you'd all be home together and you'd be able to get some work done. 2) Do you have any business in your area who put on sales? They take your stuff and sell it for you. Of course, they take a cut but it's out of your life and generates more income than a dumpster.
Good luck, Mrs. F!!!
Susannah,
Not bossy... I have my niece lined up for the week after she's out of school so that should help immensely (seeing as Baby is up during nap again... do not tell me the not quite 16 month old is giving her nap up now of all times!!!)
We do have some places like that (esp for the kid stuff) and have sold some there before. We'll do that with some of it and probably donate the rest... at least it'll be a write-off.
Deb,
Hey these are healthy.... chocolate has much needed antioxidants... and the peanut butter is a solid protein source! ;)
The girls and I just whipped these up..they are currently cooling on the stove and look DELICIOUS!! Not sure we will make it till they cool...
Marie,
yeah I didn't either... and I can attest that they were even better when still warm ;)
Oh thank you thank you, I know what Ill be making tonight!
Oh my.. after the day I had, those would be perfect. Think I need to write down that recipe!
So how long do I cook them in an 8x8 pan? (I don't have a 9x9)
Thanks!
Robin,
not much more I'd start checking it at 35 min.
Sweet! Thanks. :) I'm putting chocolate and PB chips in. I'll let you know how they turn out.
Wow those look delicious!
DROOOOOOOOOOOOOOl.
MizFit
The bars made with chocolate and PB chips were incredible. Very rich. I ate three...and threw the rest out this morning. I gotta get back on the wagon!
