Kid Cooks
"Magical Peanut Butter Cookies"
adapted from Paula Dean
1/2 c peanut butter
1/2 c sugar
1/2 beaten egg
1/2 t vanilla
Mix peanut butter & sugar together with wooden spoon.
Add egg & vanilla and mix thoroughly.
Roll tablespoonfuls of dough by hand and place on a cookie sheet.
Dip fork in flour or sugar and press tops.
Bake at 350 for 12 minutes.
Cool on sheets and sprinkle tops with sugar.
Make 9 cookies at 140 calories each.

Have you tried Sunbutter? You can get it at Whole Foods... it is pretty close to pb tasting and it is not another nut! It's what we had to use at Kid's preschool.

They're fantastic. If they're really sticky put in a Tablespoon or two of flour to make them more workable.
I totally messed with the recipe today trying to take out 1/2 the sugar... terrible. They need all that sugar!

OK -- I was laughing outloud when Kid described how to use the fork -- "you do doo-doo, or doo-doo" -- that's totally how I would describe the process! Very funny.

I like that the recipe only makes 9 cookies...just enough for the kids and only a couple for me. Can't do major damage. Well, unless I eat all 9.
How do you use 1/2 an egg? Do you beat it in a bowl and then only add half of it?

well this is a half recipe... so I don't eat 18... obviously.
Yes I just beat the egg and dump in about 1/2.
Oh, dang. I had to come back to say how yummy those are. Too bad Hubby fell asleep upstairs putting the kid to bed. More for me.
It's late, but I'm making the cookies, LOL. I doubled it to make a whole batch, because I couldn't figure out what I'd do with the leftover 1/2 egg (what's wrong with me?!)!!
